There doesn't appear to be one, and I was wondering if I could create one - and if anyone familiar with the canon would like to help?

You are more than welcome to create a list, and feel free to take a look at Barid and Brightbeard's missions to see what charges they've come up with. Honestly, though, I don't think there are many charges that would be unique to the Warcraft Universe. Mostly, I think the charges boil down to the same kind of thing we see in a given mission type, just with different names.
Just my two coppers, of course.
