In fact, most of them shouldn't. I think Aslan got in because he quote is unquote the Christian god; Iluvatar (Middle-earth) got in for the same reason. They're both theoretically omnipresent in their worlds, and suchlike.
It also helps that neither of them spend much time intervening. If you claim a character knows about the PPC and Mary-Sues, then... why aren't they fighting off Sues by themselves? Why don't badfics in that canon all end with 'and then God killed the OC, the end'? Because that should happen.
Obviously, external viewpoint, the answer is 'because why would authors write that?'. But from an internal viewpoint, it's what ought to happen, if all these canons know about Sues. Therefore, since it doesn't happen, they must not know.
(A concrete example: Gimli and Eowyn are both known to be somewhat resistant to Suvian influence, but they don't remember it afterwards. If they did, and could apply that knowledge next time they saw their friends being controlled - do you really think they wouldn't take up arms against the Sue immediately? Since Gimli isn't prone to bashing in the heads of every Tenth Walker just outside Rivendell, we know that he can't be aware of what they are)
