If you want to make the noun singular, it would look like this: Sic transit nobilis (So passes the nobleman)

What I suggested is to make both plural: Sic transeunt nobiles (So pass the noblemen)

If you specifically want to say "So passes nobility," it would translate into "Sic transit nobilitas."

Of course, the motto's final form is up to Scapegrace, and it looks like the knight has quite a few options available.
